Sausage, Peppers and Eggs — Mom Mom’s Way
Ok so this one is a little different.
After realizing our son has more of an intolerance to gluten — rather than a full allergy — we have slowly been allowing him some gluten when we go out to eat. At home we still stay gluten free. But for this recipe, I just had to make it the exact way I remember my grandmother making it. And that means fresh hoagie rolls. You can absolutely make it with gluten free rolls and it will be just as delicious — but I wanted to make it the OG way!
This is one of those recipes that instantly takes me back to my grandmother's house. She would sauté sweet Italian sausage on her stove with onions and peppers, then scramble eggs right in at the end. For me — her little vegetarian — she would do the exact same thing in a separate pan, just without the sausage.
And the best part? Filling fresh hoagie rolls that have been slathered generously with mayonnaise. Simple, comforting and absolutely delicious.
I cooked the sausage, peppers and onions on my Traeger and the vegetarian version on my stove and this whole meal was on the table in just over 30 minutes. Perfect for those long days after work and sports practice when everyone is starving and just needs something warm and filling.
INGREDIENTS — Serves 3
Meat filling:
2 sweet Italian sausages
1 red pepper, sliced
½ large onion, sliced
A little olive oil for the pan
4 eggs, scrambled
Vegetarian filling:
1 red pepper, sliced
½ large onion, sliced
A little olive oil for the pan
2 eggs, scrambled
For serving:
3 fresh hoagie rolls (or GF rolls)
Mayonnaise — and don't be shy with it!
INSTRUCTIONS
Step 1: Fire up the Traeger
Before anything else get your Traeger going. Set it to 450°F and let it heat up while you prep everything else.
Step 2: Prep the vegetables
Slice the peppers and onion and divide them between two pans — about one third goes to the vegetarian pan and two thirds goes with the sausage for the meat eaters. Adjust based on how many people you are feeding.
Step 3: Cook the sausage and veggies
Place the sausages along with the peppers and onions in a cast iron and place directly on the Traeger at 450°F. Cook for about 30-35 minutes until the sausages are cooked through with beautiful char marks and the peppers and onions are caramelized and golden.
Step 4: Cook the vegetarian filling
While the sausage pan is on the Traeger heat a little olive oil in a separate pan on the stove over medium heat. Add the remaining peppers and onions and sauté for about 10- 15 minutes until soft and golden. Set aside until the cast iron comes in from the grill.
Step 5: Scramble the eggs and cook
Crack all 6 eggs into a bowl and whisk well with a pinch of salt and pepper. When the sausage pan is done bring it inside and place on the stove over low heat. Add 4 eggs to the sausage pan and 2 eggs to the vegetarian pan. Scramble gently into the peppers and onions and finish both on the stove until just set
Step 6: Prepare the rolls
Slice your hoagie rolls and slather generously with mayonnaise — and don't be shy! This is not the time for a thin scrape.
Step 7: Fill and serve
Slice the sausages and add to the meat eater rolls along with the pepper, onion and egg mixture. Fill the vegetarian roll with the pepper, onion and egg filling. Serve immediately while everything is hot.
Some recipes are about feeding people. And some recipes are about remembering the person who first made them for you. This one is both.
HELPFUL TIPS:
Don't skimp on the mayonnaise — a generous slather is what makes this sandwich.
GF rolls work beautifully here—just make sure your sausage and mayonnaise are also gluten-free if needed.
No Traeger? Cook the sausage in a pan on the stove or in the oven— still delicious.
Adjust the amount of peppers and onions in each pan based on how many meat eaters and vegetarians you're feeding.
This recipe scales up beautifully — just add more sausages, veggies and eggs and the table grows with you.
