Build-Your-Own Quiche

When we lived in New York City, Friday nights were pizza night.

I'd stop by one of our favorite neighborhood pizzerias and pick up fresh pizza dough on the way home. Then we'd spread everything out on the counter and make a few different pizzas so everyone had something they loved. Pesto for me, meat for my husband, and whatever sounded good that week for everyone else. I'd toss together a simple salad (because I always need my vegetables!), and we’d all sit in front of the tv for movie night.

These days, pizza night looks a little different.

Instead of pizza dough, I use eggs as the base and set up what we call our “Build Your Own Quiche Bar.”

Everyone fills their bowls with peppers, onions, artichokes, cheese, bacon..whatever they like! And then the same simple egg mixture—just eggs, salt, and pepper—gets poured into little individual glass baking dishes.

Mine is usually loaded with vegetables and goat cheese. My son piles on bacon and veggies, while my husband never says no to bacon and cheddar.

Thirty minutes in the oven, a simple salad, some crispy French fries, and somehow we've created a new family tradition.

It may not be pizza night anymore, but it's every bit as fun and delicious!

INGREDIENTS — SERVES 3

Base:

  • 8 large eggs

  • salt

  • pepper

Meat:

  • Bacon

  • Ham

  • Sausage

Veggies:

  • Onions

  • Peppers

  • Artichokes

  • Lettuce for salad

Cheese:

  • Cheddar

  • Goat cheese

  • Mozzarella

Salad dressing:

  • ¼ cup of olive oil

  • 2 tablespoons of balsamic vinegar

  • 1 teaspoon of dijon mustard

  • 1 teaspoon of mayonnaise

  • Juice of half a lemon

INSTRUCTIONS

Step 1: Prep the Oven
Preheat oven to 375°F. Lightly grease three individual baking dishes.

Step 2: Make the Egg Base
Whisk together the eggs with salt and pepper until well combined.

Step 3: Build Your Quiche
Set out the toppings buffet-style and let everyone customize their own quiche. Next, pour the egg mixture evenly between the dishes.

Step 4: Bake
Bake for 25–30 minutes, or until the center is set and the tops are lightly golden.

Step 5: Make the salad dressing
I love a simple balsamic dressing with this. Add olive oil, balsamic vinegar, lemon and a little mayo and dijon mustard to a container and shake! If I have balsamic glaze on hand I add a little of that as well.

Step 6: Serve
Let quiche cool for a few minutes before serving with French fries and a simple salad

Everyone gets exactly what they want—and somehow we're still eating the same dinner. That's the kind of meal I love most.

HELPFUL TIPS:

  • This recipe serves 3-4 but scales up easily — just multiply everything and the table grows with you!

  • Don't overfill the dishes — the eggs puff up while baking and settle as they cool!!

  • Cook vegetables like mushrooms first if they release a lot of moisture — although I like my onions raw!!

  • If using marinated artichokes make sure to drain them well and squeeze out as much liquid as possible!!

  • Always add extra bacon for the meat eaters — my family always does!! And I throw in some sliced avocado because why not!!

  • Set up your "Quiche Bar" buffet style and let everyone build their own — kids especially love making their own combinations!!

  • No individual baking dishes? A muffin tin works perfectly!!

  • Serve with crispy French fries, roasted potatoes, a GF baguette or a simple green salad!!
